2.) Go to Filter > Extract. Once the Extract panel appears, Select the Edge Highlighter tool (Top Left of panel). Now go to the controls on the Right and set Brush size to 20, then Select Smart Highlighting. Place your curser on the image and start dragging it along the edges of the subject in the image. (You do not have to highlight the areas where the object touches the image boundaries.)

3.) Next, Select the Fill tool (Top Left of panel). Carry the curser to the Inside of the Highlighted area and click once to fill. (This is the portion of the image that will remain.)

4.) Now, click the OK button and the background will disappear!

5.) Go to the Layers palette and click the Create a new layer button (located Bottom of palette) and a new blank layer will be Created. Now, Drag this layer Below the subject layer.

6.) Select a color of your choice by clicking the Foreground Color swatch, then use Alt+Backspace to Fill.

Any Background can be used, just be sure to place it Below the subject layer.

Closing notes... There may be times that the Extraction needs a small amount of clean up along the subjects edges. In this case, click on the subject layer to Select it's layer, then Select the Eraser tool and by using a small Hard Round brush, you can easily complete the clean up work.
